White chayote or pear squash has a flavour similar to that of its green cousin, but is sweeter and smoother. It has cream-coloured skin and white flesh. It can be cooked in the same way as a courgette: baked, puréed, in fritters, or in soup.
The white chayote is an ideal ally for weight-loss diets, as it is very low in calories (24 kcal per 100 g). It is also rich in minerals (iron, calcium) and vitamin C (20 mg per fruit), which has antioxidant properties (fights cell ageing) and contributes to bone and teeth health.
