Meyer lemon
The lemon of pastry chefs
The Meyer lemon tree is a hybrid between an orange or mandarin tree and a lemon tree. The fruit’s flavour is milder than that of regular lemons (Eureka variety) as it is less acidic and a bit sweeter.
When ripe, it takes on a slightly orange hue.
This is the ideal lemon variety for all pastries and jams.
It has a high vitamin C content and also contains vitamin B9, potassium, phosphorus, calcium and magnesium. It facilitates digestion and, above all, revitalises in case of fatigue or convalescence. It also helps to combat anaemia.
